Smoked Trout Salad

This simple salad celebrates flavours of summer and is perfectly complemented by Lucy's Zesty Mayo Dressing.

Ingredients

  • Lucy's Zesty Mayo Dressing
  • 2 fillets of smoked trout
  • 2 handfuls of rocket salad
  • 2 handfuls of spinach leaves
  • 10 green beans trimmed
  • 1 tbsp of pumpkin seeds or sunflower seeds
  • 10 slices cucumber
  • 6 cherry tomatoes halved
  • 1 ripe avocado
  • A few fresh chives chopped

Preparation

  1. Wash all your leaves along with the cucumber, tomatoes and green beans.
  2. Blanch the green beans for 4 minutes and then rinse in cold water to refresh.
  3. Place the rocket, spinach leaves, slices of cucumber and tomatoes in a bowl. Toss.
  4. Flake the smoked trout over your prepared salad.
  5. Spoon in in avocado using using a teaspoon.
  6. Add the blanched green beans and sprinkle with the pumpkin seeds.
  7. Add Lucy’s Zesty Mayo Dressing.
  8. Finally garnish with a few freshly chopped chives and a wedge of lemon if desired.
