Baked Prawns with Tomato & Feta

This recipe celebrates the incredible sweetness of Italian tomatoes, captured within Mutti’s Finely Chopped Tomatoes 🥫.

Mutti Finely Chopped Tomatoes (Polpa)

Ingredients

3 tbsp extra virgin olive oil

1/2 onion, finely diced

1 can Mutti Finely Chopped Tomatoes (Polpa)

175ml water

1/4 tsp dried oregano

Pinch of paprika

1 tsp red wine vinegar

750g extra-large prawns (peeled)

Salt and freshly ground black pepper

150g feta cheese, crumbled

1 tbsp chopped flat-leaf parsley

Method

  1. Preheat your oven to 180°C.
  2. Warm the olive oil in a large frying pan over a medium heat and cook the onions, stirring occasionally until soft, for around 7 minutes. Increase the heat to high and stir in tomatoes, water, oregano, paprika and vinegar and stir well. Bring to a boil, reduce the heat to low and simmer until thick, about 20 to 30 minutes. Remove from the heat.
  3. While the tomato sauce is still hot, add the prawns to the sauce and stir together. Season with salt and pepper. Pour the mixture into an oven-proof baking dish distributing the prawns evenly. Crumble the feta onto the top. Bake until the prawns are cooked and the sauce is bubbling around the edges, about 10 to 12 minutes.
  4. Garnish with parsley and serve with a crusty loaf of bread.
