There’s something wonderfully comforting about a good sausage. Whether it’s sizzling away on a summer barbecue, perfectly tucked into a crusty roll or served alongside a hearty breakfast, it’s a true British favourite, and one we’re very proud to make by hand here at our Farm Shop Butchery.
From Farm to Butchery
Great sausages begin with great ingredients, and for us that means carefully sourced, high-quality pork. We’re proud to work with the local Blythburgh Farm in Suffolk, where pigs are free range and reared with care and respect for their natural environment. It’s this commitment to welfare and quality that shines through in every bite, giving our sausages their rich flavour and satisfying texture.
The Heritage of the Humble Sausage
Sausages have been enjoyed for centuries. The first dated sausage is believed to have originated from the Roman period, with the earliest known practice of encasing seasoned meat within animal intestines dating back to 3,100 BC.
British sausages appear in written records as early as the 15th century and the term “banger” emerged during World War I due to meat shortages. Over the years, every region has developed its own take, from herby and rustic to bold and spicy. Here in Britain, the humble sausage has become a much-loved staple, and we’re delighted to carry on that tradition in our own way.
More Than Your Average Sausage
One of the things our team loves most is getting creative with flavours throughout the year. Depending on the season, you’ll often find up to 15 varieties available in our butchery, each one thoughtfully developed to reflect what’s growing and tasting its best.
In the spring, you might spot our wild garlic sausages, bursting with fresh, vibrant flavour. As the year rolls on, we take inspiration from the farm itself, including our Halloween-inspired pumpkin sausages, made using our very own homegrown squash. From classic favourites to more adventurous combinations, there’s always something new to discover.

Handmade The Traditional Way
All of our sausages are made on site by our skilled butchery team, who prepare them twice a week to ensure they’re as fresh as can be. It’s a hands-on, traditional process – the pork is carefully prepared, coarsely minced and blended with herbs, spices and seasonings before being gently filled into natural casings.
There’s a real craft to it. Getting the balance just right, the perfect mix of meat, fat and flavour, takes time, experience and a good nose for what works. You might even catch the scent of fresh herbs being mixed or hear the rhythmic linking of sausages if you pass by at the right moment.
In a world where food can often feel disconnected from its origins, those connections matter more than ever.
BBQ Season Favourite
When the warmer months arrive, sausages really come into their own. As the grills fire up, our butchery becomes a hive of activity, with everyone stocking up for garden gatherings and sunny evenings.

Our delicious sausage meat is also the star ingredient in our much-loved sausage rolls, proudly made here in our Farmhouse Kitchen, available from our Deli. Crafted using the finest locally sourced ingredients and prime cuts of best British pork from Blythburgh Farm, our sausage rolls are wrapped in a rich, buttery puff pastry for the perfect deli treat.
