Christmas at Priory Farm

Butchery Orders

We are proud to be sourcing our Turkeys from Sussex based Meadow Brook Farm this Christmas, owned and run independently by Will Sheffield and family since 2010. The traditional rearing methods that they employ mean the welfare of their birds is paramount. Small flocks of birds are free to roam in the grassy paddocks and fields surrounding their farm, resulting in free-range, succulent, delicious birds for the centrepiece of your Christmas dinner! These Free-Range Turkeys are repeat winners as “Champion Turkey” at the South East Marts Winter Fayre and prize winners at Ashford Christmas Fat Stock show.

Here at Priory Farm we offer a wide selection of poultry to bring some festive cheer to the Christmas dinner table. Our premium range of poultry is both delicious and versatile. Our Herb Fed Chickens have time to grow slowly, reaching maturity naturally, the taste and texture has had time to develop further. The fresh herbs they are fed on really enhance the natural flavour of the meat giving it a greater depth and unique taste. Enjoy a Three Bird Roast, featuring Turkey, Duck and Guinea Fowl filled with flavour, our succulent and rich Whole Duck or a traditional Goose for the ultimate festive treat.

Beef Wellington

If you want to make a big impression for Christmas dinner, look no further than a Beef Wellington. Handmade here at Priory Farm, our Beef Wellington includes beef tenderloin, sautéed mushroom duxelles and a rich chicken liver pâte, rolled in buttery puff pastry for a grand centerpiece.

Dry Aged Pasture for Life Beef

Our Dry-Aged Beef is primarily sourced from Brightleigh Farm in Outwood & Burgham Farm in Etchingham, East Sussex. Pasture for Life beef is from native-breed cattle reared in harmony with nature on small, family farms in Surrey and Sussex, producing beef that has exceptional taste, flavour, texture and tenderness. The taste of Pasture for Life produce reflects the qualities of the plants the animals have eaten and the health of the soil beneath their feet. To lock in these great flavours, our meat is dry-aged here at our Butchery for at least four weeks and then prepared using the finest craft butchery.

Beef is the perfect centrepiece for any Christmas celebration. Our showstopper Rib of Beef is a knock-out celebration centrepiece – or perhaps for a smaller fuss-free celebratory feast, our succulent fillet of beef is quick and easy to cook. Our Beef is primarily sourced from farms in Surrey, Sussex & Kent and certified Pasture for Life, with their herd of cattle raised entirely on pasture, with no cereals, proven to have the highest of nutritional value and flavour.

The Christmas Gammon, is there anything more magical that brings so much joy with leftovers for days? Gammon is a traditional favourite for your Christmas menu, whether served as part of your festive feast, or as a centrepiece. Our gammon joints are traditionally brine-cured and air dried to create a wonderful flavour and sublime texture. Cut from free range pork, these joints are ideal for glazing at home.

Our range of Free Range pork joints are sourced from Field Place Farm in Haywards Heath and promise unrivalled flavour and rich succulence for your festive celebrations. We’ve got plenty to choose from, including our succulent slow roast pork shoulder to our very own twist on the classic Porchetta. The best bit? The most wonderful, crispy crackling of course!

Sourced from Charles Hepher in Sharpthorne West Sussex, our lamb is a delicious alternative centrepiece for your festive feast. Our Leg of Lamb is popular due to it’s dark, melt-in-the-mouth meat and meat-to-bone ratio, making this one easy to carve at the dinner table. One of the most delicious cuts for slow cooking, our Shoulder of Lamb simply requires a low and slow heat to bring out its deliciously rich and rounded depth of flavour.

The rich flavour of a venison makes it a beautiful meat for your Christmas meal – dark, lean and deliciously tender. We source our Venison from right here on the Priory Farm Estate as well as just across the border in Sussex. This Christmas, choose from a Haunch or Loin to treat your family and friends.
