Vegan Blueberry Cake - Priory Farm Recipe

Ingredients

175 ml Rude Health Oat Drink
250g flour
150g sugar
130g fresh or frozen blueberries
100 ml sunflower oil
20g cornflour
8g baking powder
1 tsp vanilla extract
Pinch of salt

All ingredients are available to purchase in our Farm Shop

Method

  1. Pre-heat the oven at 175’C, line your loaf baking tin with baking paper or grease with a little oil.
  2. Mix together all your dry ingredients, including the flour, sugar, cornflour, baking powder and salt in a bowl, until well combined.
  3. Add in the vegetable oil and Oat Drink and whisk until smooth.
  4. Add the blueberries and carefully fold into the dry mix.
  5. Pour the mixture into the baking tin and bake for approximately 45 minutes or until golden brown.
  6. Leave to cool on a baking rack before serving.
