Charred Purple Sprouting Broccoli

A seasonal side dish perfect for cooking over the fire.

Ingredients

450g purple sprouting broccoli (or Tenderstem broccoli if not in season)

Generous pinch of The Salt Box Chilli, Fennel and Orange Seasoning

1 lemon

2 cloves of garlic

A small handful of fresh herbs (parsley, oregano or marjoram work well)

Glug of rapeseed oil

All ingredients are available to purchase in our Farm Shop

Method

  1. Wash the purple sprouting broccoli under cold running water. Place a large pan of salted water over a high heat and bring to the boil.
  2. Have a bowl of cold water ready, place the purple sprouting broccoli into the boiling water and blanch for 2 minutes. Plunge the blanched purple sprouting broccoli into the bowl of cold water to refresh. Drain well and set aside.​
  3. Zest the lemon and crush the garlic cloves into a bowl.
  4. Finely chop the herbs and add to the bowl along with the Chilli, Fennel and Orange Seasoning.
  5. Stir in the rapeseed oil and toss the purple sprouting broccoli in the dressing.​
  6. If cooking on the BBQ, cook the purple sprouting broccoli on a grill over a bed of hot embers until it’s nice and charred all over. If cooking on a hob, heat a griddle pan until piping hot and cook until your broccoli is nice an charred all over.
  7. Once the broccoli is cooked, remove from the heat and toss back in the dressing for extra flavour.
