Earl Grey Poached Pears

A twist on the classic with the citrusy floral notes of Earl Grey.

Earl Grey Poached Pears Recipe

Ingredients

4 pears
3 bags of Tea Pigs Darjeeling Earl Grey tea
Peel of ¼ of an orange
3 tbsp sugar
600ml water
1 vanilla pod

Method

  1. Peel the pears and cut in half.
  2. Put the tea bags in a large pan, then add the water and the sugar. Bring to a boil; then remove from the heat and let steep for 3 minutes.
  3. Remove the tea bags.
  4. Place the pot back on the stove and bring to a slow simmer over medium heat. Add the pears, orange zest and vanilla pod, then cover the pot with a lid. Leave the pears to simmer slowly for 15–20 mins, or until just tender – the time will depend on the size and how ripe your pears are.
  5. Remove the pears with a slotted spoon and pop on a plate.
  6. Bring the liquid back to the boil and simmer until thickened and reduced by 50%, then remove the orange peel.
  7. If you’re serving straight away, we’d recommend serving the pears warm. Add the pears back to the pan of liquid and gently warm.
  8. To serve, choose from mascarpone, vanilla ice-cream, custard or greek yoghurt. For an indulgent breakfast treat, allow any leftover pears to cool, then place them in the fridge overnight. Enjoy in the morning with yoghurt and granola.
