Earl Grey Poached Pears
A twist on the classic with the citrusy floral notes of Earl Grey.

Ingredients
4 pears
3 bags of Tea Pigs Darjeeling Earl Grey tea
Peel of ¼ of an orange
3 tbsp sugar
600ml water
1 vanilla pod

Method
- Peel the pears and cut in half.
- Put the tea bags in a large pan, then add the water and the sugar. Bring to a boil; then remove from the heat and let steep for 3 minutes.
- Remove the tea bags.
- Place the pot back on the stove and bring to a slow simmer over medium heat. Add the pears, orange zest and vanilla pod, then cover the pot with a lid. Leave the pears to simmer slowly for 15–20 mins, or until just tender – the time will depend on the size and how ripe your pears are.
- Remove the pears with a slotted spoon and pop on a plate.
- Bring the liquid back to the boil and simmer until thickened and reduced by 50%, then remove the orange peel.
- If you’re serving straight away, we’d recommend serving the pears warm. Add the pears back to the pan of liquid and gently warm.
- To serve, choose from mascarpone, vanilla ice-cream, custard or greek yoghurt. For an indulgent breakfast treat, allow any leftover pears to cool, then place them in the fridge overnight. Enjoy in the morning with yoghurt and granola.
