Crispy Gnocchi & Lemon Drop Chilli Traybake

Crispy gnocchi, with roasted vegetables in a creamy sauce with a kick from our Lemon Drop Chilli Jam. It’s quick and easy to make with the versatility to swap the vegetables according to what you have in. Be warned, the Lemon Chilli jam has got a real kick to it, so go lightly!

Crispy Gnocchi & Lemon Drop Chilli Traybake

Ingredients

2x 500g Garofalo gnocchi
1 red onion, cut into wedges
1 courgette, cut into bite-sized pieces
175g cherry tomatoes
200g Feta cheese
100g fresh spinach leaves
1 tsp Single Variety Co. Lemon Drop Chilli Jam
2 tsp olive oil

All ingredients are available to purchase in our Farm Shop

Method

  1. Pre-heat the oven to 200’C.
  2. Scatter the gnocchi in a baking tray and drizzle with olive oil.
  3. On another baking tray, spread out the vegetables and top with your feta cheese, a dollop of the Lemon Drop Chill Jam, then a drizzle of olive oil. Mix everything loosely together.
  4. Place both trays in the oven and bake for 20-25 minutes. The cheese should have started to turn slightly golden. Give the gnocchi a shake half way.
  5. Once cooked, take the vegetables out of the oven and give everything a good stir with a dash of water to loosen up the mixture and create a deliciously creamy sauce.
  6. Just before serving, stir through the spinach. Enjoy!
